Yamahai-shikomi is officially called yamaoroshi abolition moto (shubo).
Lactic acid is essential for the healthy functioning of yeast, but since this brewing method uses natural lactic acid bacteria, it is an old-fashioned brewing method that eliminates the use of paddles, and takes more days than regular (sokujo) brewing. 2 to 3 times more is required.
It is perfect for Japanese food as well as Western food, and its strong body and crisp taste will make it a drink that will be popular around the world in the future. It is characterized by its bright yellow color.
