When the brewery was aiming to produce "hiyaoroshi," a truly matured sake, they discovered a cave deep in the mountains of Shimanto Town, and began storing their sake in the cave.
The temperature inside the cave remains constant throughout the year at a stable 15 to 20 degrees, allowing the tea to mature in perfect condition, adding a sweetness to the flavor.
This time, it was placed in the cave in March and left to rest for about six months.
This sake is delicious at room temperature, but you can also enjoy it chilled or warm, depending on your preference.
