This is a summer-only dry sake that was thoroughly designed as a delicious drink to pair with food.
While there are many sweet and sour and juicy sakes, this book questions the reason for the existence of the classic Shizuoka Ginjo, which is the complete opposite, with low acidity and high sake content.

It has a modest aroma, and when you put it in your mouth, it has a gentle acidity, smooth flavor, and a good sharpness.
Rather than being sharply spicy, it's a type of dryness that doesn't have much sweetness.

It seems like sake was created with the priority of compatibility with food in mind, so it doesn't stand out as alcohol, but I think this kind of alcohol is what you need when enjoying a meal!
