In 1790 , the first head of the family, Hachigoro Yorozuya, opened a sake brewery in its current location, and at the time of its establishment, the name of the sake was ``Ichiriki Masamune.'' However, the younger brother of the 6th head of the family, Satoshi Nakagomi, was a French literary scholar. - Akiko Yosano , a poet who was close friends with Junji Nakagome, visited the brewery in 1932 . The name was changed to ``Shunuusaku'' because of the poem, ``A visit to Horyu-ji Temple is like a visit to the sake of the spring Uguisudo.''
We use slightly hard subterranean water from Mt. Kushigata, the southernmost tip of the Southern Alps, as the brewing water, and use cold brewing mainly for pure rice sake.
The taste of Shunuisaku is a slightly dry type with a soft flavor with a slightly refined sourness.
As the name suggests, it has a heartwarming flavor reminiscent of spring in Kai, a mountainous country.
