This was the first product that Suigei Sake Brewery produced when they started making ginjo sake, and it remains the brewery's signature pure rice ginjo sake today!
The sake is made from Hokkaido-grown "Ginpu" rice, which is suitable for sake brewing, polished to 50 % and brewed slowly at low temperature in small batches.
By combining the umami of the ingredients with the distinctive acidity of Suigei, the five flavors are fully brought out, resulting in a drink with a wide range of flavors but a sharp finish.
This is a pure rice ginjo sake with a very subtle aroma and a crisp taste that you will never tire of drinking.
・About the sake rice "Ginpu"
It was tested under the lineage number "Soraiku 158 " and registered as a variety in 2000 . The second rice suitable for sake brewing.
This variety was the catalyst for the spread of sake brewing using Hokkaido rice, and is a rice with a large, distinct shinpaku (core) and a high rate of shinpaku (core appearance).
Sake brewed using "Ginpu" tends to have a mellow flavor.
It was named "Ginpu" after the rice used to make ginjo sake.
