This is Sasaichi's Yamahai Junmai Ginjo sake, brewed with Koshu Yumesansui rice, all of which is produced in Yamanashi Prefecture.
It is brewed with Gozensui water from the sacred Mount Fuji, one of Japan's most famous springs.
It has a strong richness and acidity derived from the lactic acid. It is a rich, delicious sake to be enjoyed with food, with a mellow, gentle flavor that spreads throughout your mouth.
・About Sasaichi Sake Brewery
Located in Otsuki City, Yamanashi Prefecture, it was founded as Hanadaya in 1661 .
Hisashi Amano, who later inherited Hanada-ya and became the first head brewer, renamed the brewery Sasaichi Sake Brewery in 1919 and has a history of over 300 years .
The brewing water used comes from an underground spring that originates from Mount Fuji where the brewery is located. This water was chosen by Emperor Meiji to carry with him when he traveled from Tokyo to Kyoto, and is known as "Gozen-mizu."
They place the utmost importance on the relationship with food, and rather than emphasizing individuality, they decide on the flavor after considering sake as a beverage.
