This limited edition shochu is made by making rice koji from early rice harvested on the Osumi Peninsula in Kagoshima Prefecture, brewing it with freshly dug sweet potatoes grown under contract, and then roughly filtering it.
By blending raw liquor brewed with the same ingredients and stored in earthenware jars, this potato shochu has the sweetness and deep richness of the black koji, and although it is unfiltered, it has a pleasant, lingering, gentle aroma and flavor without any impurities.
