・What is Iki Shochu?
Iki shochu is a type of authentic barley shochu produced in Iki City, Nagasaki Prefecture.
The ingredients must be barley and water from Iki City. Some barley shochu uses barley koji, but Iki shochu uses only rice koji.
The appeal of Iki shochu lies in the unique sweetness produced by the use of rice koji and the crisp taste that comes from using Iki's mineral-rich groundwater .
