Since the Liquor Tax Law was enacted in 1899 , 55 shochu breweries have been established in Iki .
Since then, there have been many mergers and closures, and currently seven breweries are competing to make shochu. Ikinokura Shuzo, located on a small hill in the center of the island, is one of them.
Six breweries came together to establish the Iki Shochu Cooperative Association in 1984. In 2010 , in hopes of further growth and the development of Iki Shochu, the company changed its name to Ikinokura Shuzo.
While preserving the traditional techniques handed down since the 16th century, they boldly take on new challenges such as reduced pressure distillation and flower yeast brewing in the pursuit of the deliciousness of Iki Shochu.
