Barley shochu is made by slowly fermenting moromi, which is the base of barley shochu, in a wooden container called a kioke, which combines cedar boards with a height of 7 cm.
Wooden barrels have excellent heat insulation and heat retention, so the mash during fermentation is not affected by changes in the outside temperature, and the gentle fermentation results in a high-quality mash.
Finished with normal pressure distillation to bring out the rich flavor of barley.
