・About water
The clear underground water that springs up from the middle of Mt. Tenzan. The Gion River, which flows in front of the sake brewery, is a clear stream that collects water from the Tenzan mountain range, and is one of the most famous Genji firefly villages in Japan.
The "Shimizu Falls" where this underground water flows down has been selected as one of the top 100 famous waters, and is the " treasure water " that is indispensable for sake brewing at Tenzan Shuzo .
This water has no iron content and is moderately hard water containing a lot of minerals such as calcium and magnesium, making it ideal for sake brewing.
・About sake rice
About 90 % of the rice used at Tenzan Sake Brewery is locally grown in Saga Prefecture. Yamadanishiki and Saganohana are mainly used.
The Tenzan Sake Rice Cultivation Research Group was established in 1998 with farmers in Saga Prefecture, believing that we must also be involved in producing good rice. Through the meeting, we study each other's cultivation techniques and use them for traceability, and we are working on making better quality sake rice.
