The name of the sake, Kajinami, comes from Kajinami Farm, which is located 400 meters above sea level southwest of Kobayashi City, Miyazaki Prefecture, and grows over 50 types of vegetables in the fertile volcanic ash soil and harsh climate with large temperature differences.
Kajinami Farm is a renowned farm whose reputation is not only felt locally, but also in three-star restaurants in Fukuoka, Nagoya, Tokyo, and other cities.
The Kajinami Farm grows the highest quality golden Senkan rice exclusively for the sake brewery Otemon. (The sake brewery Otemon is the only one that has been provided with raw materials for shochu.)
It is made using 100% Golden Senkan rice from Kajinami Farm, and the koji rice is newly grown Koshihikari rice from Miyazaki Prefecture.
