Traditionally handmade, cave-stored potato shochu
Handmade shochu Kurotsubaki is an imo shochu that is carefully crafted by experienced Kurose brewers using the traditional method of making koji by hand in a cave, and then aged for a long period of time in the Rakubamatsu storage facility.
It has a soft and gentle texture, a mild aroma, and a calming flavor that leaves a pleasant aftertaste.
The cave used for storage is a horizontal cave approximately 3 meters high and 30 meters long, carved out of the mountain behind the storehouse.
There is little temperature difference or air current throughout the year, and the temperature and humidity are kept constant, creating ideal conditions for storing and aging shochu.
