The sweet potato varieties grown by Kamisako Farm in Ariake-cho, Shibushi City, Kagoshima Prefecture, Marunishi Shuzo's hometown, are aged in a tunnel for over 100 days, converting the starch into sugar to create the best quality sweet potatoes.
The sweet potatoes are sold under the brand name "Makoto no Imo" and have many fans across the country.
When the Makoto potatoes (matured Beni Haruka) were at their best, the baton was passed on to Marunishi Sake Brewery.
Marunishi Shuzo's reliable techniques have resulted in a fragrant, sweet-tasting sweet potato shochu.
It has a soft, gentle, sweet and fruity aroma and a sticky sweetness that comes from the increased sugar content that comes from aging.
