Malic Acid High-Producing Yeast Association No. 77 is used.
We use wooden barrels that have been lying dormant at Konko Shuzo for over 20 years and Omachi rice grown by the brewers.
The subtle aroma of the wooden barrel, the sweetness when you put it in your mouth, and then the strong yet light acidity that tightens the taste are all in perfect balance.
Malic acid is said to be a delicious cold acid, so enjoy it chilled with your meals during this hot and humid season.
