Orange wine from the Voeu "Wish" series, featuring an earthenware angel with a message of recovery

Koshu grapes from contracted farmers, which have particularly dark skin color, are fermented with the skins on for five days, and after pressing, they are fermented in old barrels until they become dry.They are then stored until spring and bottled raw, unfiltered.

It has a moist pale orange appearance and a scent of potpourri, citrus peel, black tea, and plum blossom that will mellow out over time.
The attack is round and sweet, but the generous amount of astringency from the pale purple Koshu skin tightens the overall flavor while leading to an apricot-like fruitiness, and the sweet and sour taste of freshly squeezed Koshu skin and seeds gently comes back to life in the aftertaste.

When used alone it has a strong astringent taste, but its potential is fully realized when combined with certain foods.
It goes perfectly with dishes such as fried chicken with plenty of green onion sauce, dim sum with lard and back fat, dumplings, and garlic and cheese dishes.

The ideal drinking temperature is around 12°C, and because it is unfiltered and bottled raw, sediment and tartar will precipitate.

*Vous means "wish" in French. It was named to bring hope to those who drink it, sell it, and make it.
