[Cantina Hiro Legame Metodo Classico Extra Dry Koshu 2020]

Sparkling wine for a refreshing and elegant moment

The grapes are harvested three times, early and at the perfect ripeness.
The grapes are thoroughly chilled to 4°C before being de-stemmed and crushed. The juice is allowed to settle for a day, and then the supernatant is fermented at low temperature in a stainless steel tank.
After fermentation is complete, the early-picked grapes are blended with the grapes of the appropriate maturity, and then the base wine is completed after paper filtration.
It is aged in the bottle for 24 months, and 2% of Chardonnay from our own vineyards is added to make up for the loss during disgorgement.
After dosage, it is aged in the cellar for a further 6 months before being released.

A transparent pale straw yellow color with lovely, fine bubbles rising from the mouth.
Citrus aromas of grapefruit and lemon, and the freshness of green apple.
The spicy aroma of Japanese pepper and the aroma of biscuit and brioche that comes from aging add accents and complexity.

When you put it in your mouth, you will feel a soft sweetness, but it also has a dry impression and fine, gentle bubbles spread out, with a pleasant aftertaste of acidity and carbon dioxide.
