This Daiginjo sake was carefully brewed using Yamada Nishiki from Special A-grade rice-producing areas and primarily Senbon Nishiki, polished down to 40%.
The "nakagumi" (middle-pressed portion) of this sake is bottled, pasteurized once by bottle heating, and then aged for a short period in refrigeration before being released from the brewery.
In addition to the elegant softness characteristic of Senbon Nishiki, you can also feel the framework of Yamada Nishiki, with the gorgeous aroma and sweet umami of a Daiginjo slowly spreading across the palate.
This is a sake that any sake connoisseur would want to try at least once.
