・Founding and History
Founded in Meiji 8 (1875). By Meiji 28, it was brewing 1,700 koku, making it one of the top three breweries in the prefecture in terms of production volume. Although operations were temporarily suspended due to war, the brewery remained dedicated to sake production.
A significant change occurred in Showa 63 (1988) with the appointment of Junichiro Aihara as representative.
He thoroughly embraced "quality first," aiming to brew sake that he himself would enjoy drinking. The brewery was reborn as a Ginjo brewery.
・Origin of "Ugonotsuki"
The brewery's signature sake, "Ugonotsuki" (Moon After Rain), was named by the second generation, Tadasu Aihara, after a short story title from the essay "Nature and Life" published by novelist Roka Tokutomi in Meiji 33 (1900).
"A moon that shines brightly and clearly in the sky after the rain, illuminating its surroundings." This name embodies the brewers' constant goal: to brew such clear and beautiful sake.
