In 1790 (Kansei 2), the first generation owner, Hachigoro Yorozuya, opened a sake brewery in the present location. The original sake brand was "Ichiriki Masamune". However, when Akiko Yosano, a poet who was friends with Junji Nakagomi, a French literature scholar and younger brother of the 6th generation owner Minoru Nakagomi, visited the brewery in 1932 (Showa 8), she composed a poem: "Visiting Horyu-ji Temple and the brewery where Kai's sake, Shunnoten, is brewed." From that, the name was changed to "Shunnoten".
For brewing water, they use subsoil water from Mt. Kushigata, the southernmost tip of the Southern Alps, which is slightly hard, and mainly brew junmai sake in the cold season.
Shunnoten's taste is a slightly dry type with a soft umami and a subtle, elegant acidity.
As its name suggests, its charm lies in its gentle flavor reminiscent of spring in Kai, a mountainous country.
