At the beginning of the distillation, the alcohol concentration is high and gives off a chemical-like aroma.
Also, in the latter half of the distillation, shochu with bitterness and peculiarity drips out.

In this series of distillation processes, only the parts with good taste and aroma are extracted.
It is a luxurious distillation method that can only make about half of the usual amount in one distillation because it extracts only the good taste.
