Our first pick, Shunyo, is sweet but low in protein, meaning it has less amino acids than the regular Hiran series, resulting in a cleaner flavor.

Generally, alcohol made with Shunyo is known to have a fruity aroma with a green image, which is the characteristic aroma of Sauvignon Blanc, but I don't think this alcohol has such a strong impression.

Mori Sake Brewery says they want to continue communicating the charm of Shunyo through trial and error.
