【Domaine Ponkotsu Jalopy 2024】

Made from Delaware, Chenin Blanc, Sauvignon Blanc, Petit Manseng, and Pinot Gris.

The Delaware grapes harvested in August were destemmed and crushed, then fermented in tanks.
During fermentation, Chenin Blanc and other varieties (from Mizuguchi) were placed on top of the bunches for several days of carbonic maceration. Ten days later, they were pressed together with other Chenin Blanc varieties harvested separately.
The mixed fermentation was completed in old barrels.
