This sake is made with 100% locally-sourced Mie Prefecture sake rice, a project spearheaded by President Masuda of Hanakobai Shuzo.
Upon opening, a characteristic "pssh-pop!" sound from Hanakobai echoes, and fine "smoke" even appears in the upper part of the bottle, offering a prologue full of freshness.
While you can feel the pleasant, sweet fruity aroma characteristic of #9 yeast, a dryness, accompanied by a effervescence, is conveyed the moment it touches your lips. (Like Coca-Cola?)
Rather than shipping immediately after brewing, it is held until the perfect timing to pair with recommended dishes for the season.
It expresses both the inherent breadth of the sake's umami and a refreshing sensation.

Since ancient times, Ise Province has been known as a rice-producing region and has developed a culture of sake brewing.
Since its founding in Ansei 1 (1854), Hanakobai Shuzo has refined its sake brewing techniques in this region.
Hanakobai sake is brewed by hand, using carefully selected rice and clear water.
Since most of the processes are done by hand, only a limited amount can be brewed each year.
For that reason, we put our passionate dreams into every single drop of sake we brew.
