They use Miyamanishiki rice, which is Koshi's specialty, and by setting a low amino acid content, they reduce impurities.

A well-balanced fruity sweetness and acidity, with a rich, full-bodied flavor that doesn't make you feel the low alcohol content.
This is a sake made with the master brewer's whole heart, with a crisp aftertaste.
