【Domaine Ponkotsu Madogiwa 2025】
Made primarily with Koshu and Delaware, with some Semillon and Roussanne.
Delaware grapes harvested in August (from Yamada, Osate, and Minakuchi in Katsunuma Town) were direct pressed and fermented in barrels.
Koshu grapes harvested in mid-September (from Osate in Katsunuma Town), Semillon, etc. (from Senmaiji, Shioyama Chino) were direct pressed and fermented in barrels.
Koshu grapes harvested in mid-October (from Oizumi) underwent 3 weeks of whole-bunch carbonic maceration. After pressing, they were blended with Delaware and barrel-fermented Koshu, then stored in stainless steel tanks.
Lighter golden color than last year.
Aromas of melon, osmanthus, and koji. A slight hint of honey in the background.
With time, notes of satsuma orange and lemon emerge.
After blending, the wine was stored in stainless steel tanks, resulting in a sharper wine with a more defined acidity compared to previous years.
