Junmai Sake, the Origin of Our Founding, Embodying Our Soul
This genshu (undiluted sake) is made by aging freshly pressed junmai sake in the cellar for six months.
It expresses the rich umami of rice straightforwardly, without carbon filtration or dilution.
During the Meiji era, when the Sino-Japanese War began, rice for military use became more important than rice for sake brewing, forcing a drastic reduction in sake production due to extreme material shortages.
This led to a widespread bad practice where breweries would dilute sake with water before selling it to liquor stores, and liquor stores would further dilute it before selling it to customers. This diluted sake was apparently called "Kingyo-zake" (goldfish sake) because it was so thin that goldfish could swim in it.
Even in such times, Ichiro Watanabe, the sixth-generation head of Watanabe Sake Brewery, continued to make sake without ever diluting it.
This sake is a junmai sake that embodies the origin of our founding, upholding the family motto: "No matter how turbulent the world becomes, we must always brew sake with honesty and integrity."
