The taste is also crisp, characterized by the lively acidity typical of Sauvignon Blanc and juicy fruit, with a pleasant bitterness in the finish that tightens the flavor.

Sakai Winery, established in 1892, is the oldest winery in the Tohoku region.
Around 2007, they switched from conventional farming to pesticide-free grape cultivation in their own vineyards, and about 20 sheep are pastured in the fields for weeding.

They adhere to traditional winemaking methods, such as utilizing native yeasts and microorganisms present in the soil and using the non-filtered method that has been practiced since the winery's establishment, creating distinctive wines deeply rooted in the land.
