[Cave d'Oc Kuma (Cabernet Sauvignon) 2023]

Charming yet somewhat mysterious, with a gentle flavor that permeates the body.

Made with Cabernet Sauvignon from our own sandy vineyards.

We use four distinct winemaking methods—whole cluster, carbonic maceration, cold maceration, and a special process involving lactic acid bacteria before fermentation—each carried out in separate tanks. These are then blended together during pressing.

This wine actively generates compounds often considered off-flavors, resulting in a taste that those who enjoy it will find irresistible.
The nuances of carbonic maceration, the greenness of whole cluster, the darkness of reduction, the vibrancy of acetic acid, a hint of Brettanomyces allure, and the inherent elegance of the varietal. Various elements intertwine, releasing aromas from the glass and spreading across the palate, with a lingering finish that slowly expands.
