40 % polished rice using 100 % Yamada Nishiki from Hyogo Prefecture .
This is a brewed forest that aims to create a delicate and gorgeous taste that is different from traditional brewed woods.

The elegant ginjo aroma of Meri yeast spreads with the unique gas of unpasteurized sake, and the gentle honey-like sweetness is tightened with a slight bitterness, leaving a light aftertaste.
You can enjoy the aroma and taste that change in your mouth.

・ Brewing forest series
Normally, Japanese sake is made in a three- step process, where steamed rice, koji, and water are divided into three steps, but this brewing forest series is a one -step process that only takes one step .
Because it is squeezed at a very young stage, when the sugar is broken down into alcohol, it retains the mellow ginjo aroma and sweetness of the rice in the early stages, resulting in a fresh, refreshing and mellow sake.

We are particular about making raw unprocessed sake, and we use a bag squeezer instead of a press for squeezing.
By squeezing gently without applying pressure, you can minimize the unpleasant taste and create a fruity Japanese fruit that you can enjoy.
