Sweet potato shochu with a tropical breeze
For the raw material potato, we use "Hamakokomachi", an orange-type potato with a scent reminiscent of passion fruit.
The yeast is brewed with wine yeast (cru blanc).
It is a yeast that goes well with Hamakomachi, which has a characteristic tropical scent.
We use excellent koji that produces gorgeous sake quality in processed rice for shochu from Miyazaki Prefecture that can bring out the characteristics of hamakomachi in koji rice.
As for filtration, it is a rough filtration that only scoops, leaving the aroma components, making it an elegant and gorgeous sake with a solid quality.
