In 2021, when this was barreled, Saburumaru Distillery began an attempt to use ale yeast in a mature state through yeast cultivation.

Aged ale yeast, combined with fresh whisky yeast, creates a mellow, rich flavor.

This limited edition bottle expresses the path Saburumaru has walked, reminiscent of how an entire organization matures when experienced artisans become leaders, and new traditions are passed down.
