Started as a joint project between a sake brewery and a hot spring inn in Nagasaki and Iki, this project uses Iki barley shochu as a base to effectively utilize agricultural products that were substandard and had to be discarded as botanicals.
Distilled by blending Iki shochu with 10 types of Iki botanicals such as asparagus, yuzu, strawberries, and sea urchin shells.
The strawberry flavor hits the nose, followed by the refreshing taste of citrus fruits and the spiciness of the buds, making it a gin that goes well with Japanese food.
