A new sensation of IMO Shochu with a refreshing minty sweetness!
This is a new type of shochu that we would like you to try, forgetting for a moment the concept of shochu. When you take a sip, you'll experience a refreshing minty sensation!
While its sibling brand, "Flamingo Orange," uses sweet potato koji, this Cool Mint Green is brewed with a ratio of 1 part rice koji to 5.5 parts sweet potato koji.
The Kagoshima Kaori Yeast No. 1 used tends to produce high levels of compounds that contribute to a banana-like aroma. However, with Flamingo Orange, which uses sweet potato koji, this aroma wasn't as pronounced. It was believed that rice koji was necessary to enhance this aromatic component, which led to the development of an imo shochu brewed with rice koji and Kagoshima Kaori Yeast No. 1.
Furthermore, Master Brewer Yasuda thought that conventional brewing methods were not interesting, so to bring out more unique characteristics, he adopted the "donburi" method, where koji, sweet potato, and yeast are all added at the same time.
Compared to its initial release in Reiwa 2 (2020), the compounds contributing to fruity and citrus aromas have been successfully extracted, allowing for an even more refreshing, mint-like aroma.
