This imo-koji imokan-zukuri is made using the technique of “Ishin Ishin Ichiteki Kimoto-zukuri” and using “ potato koji ” without using even a small amount of rice koji .
For the distillation of this shochu, we use a distiller that is used for general preparation, not a tube distiller.
