Hungarian Tokaji wine is one of the three major noble rot wines in the world.
Using the Tokaji Asu brewing method, we create the base wine for Koshu, and before, during, and after fermentation, we pickle Koshu's dried fruits to add flavor, aroma, and sweetness to the wine.
The traditional production method for Tokaj Assu is to turn noble rot grapes into a paste, but by using uncrushed grapes in this wine, we suppress the extraction of bitterness.
