[GRAPEREPUBLIC Cuvée Shinden 2022]

An aromatic orange wine with a sweet and bitter flavour.

Made using 100% grapes from Nitta, Nanyo City, Yamagata Prefecture, where GRAPE REPUBLIC is located.
The grapes are grown organically without the use of any pesticides other than Bordeaux mixture, and without fertilizer or compost.

Two amphorae were used, one of which was filled with Delaware grapes with high acidity and ripeness, and whose skins were still warm, and the whole bunches were placed into the amphora for skin fermentation for approximately 40 days.
The other method is to remove all the stems and then skin ferment the Delaware grapes in an amphora for 15 days.
Aged in amphorae for approximately 9 months.

The aroma is typical of a variety intended for eating raw, with an aromatic impression reminiscent of compote orange peel, ramune, and jasmine.
The taste is a mixture of sweetness and bitterness reminiscent of orange peel, with a smooth astringency.
The aftertaste is dominated by the umami flavors of the unfiltered wine, as well as the peel and seeds.
