The other face of Yamahai Omachi, revived after approximately 14 years.

This is a limited sake that boasts exceptional popularity among the Yamahai Junmai series brewed with Omachi rice.
It's a special bottle finished with a diluted, pasteurized specification, based on the rich, unfiltered, unpasteurized sake, revived after approximately 14 years.

For the 2023 brewing year, the brewing quantity was significantly increased, and the long-term moromi process resulted in a rich, savory flavor that even the brewers were satisfied with.
A portion of that unfiltered, unpasteurized sake was carefully refrigerated and is now being re-released.

While retaining the rich Omachi-like umami and the depth characteristic of Yamahai, the alcohol content has been adjusted to 14%.
The result is a flavor that can be enjoyed comfortably without fatigue, perfect for the coming seasons.

Upon tasting, the mellow umami derived from Omachi rice gently spreads, naturally blending with the soft texture created by the dilution.
Its charm lies in its rich yet not heavy, smoothly integrating drinkability.

Please note that this is not a complete reproduction of the diluted, pasteurized version that was released only once in the past, as the alcohol content and storage methods differ.
However, it is a valuable diluted, pasteurized specification that allows you to experience a new charm of Omachi Yamahai.

The recommended serving temperature is from room temperature to warm.
Raising the temperature further enhances the contours of the umami, allowing you to fully enjoy the profound flavor woven by Omachi and Yamahai.
