・From the official website of Tanizakura Sake Brewery
It is said that the taste of sake is rice, the aroma is yeast, and the texture is water quality.
At Tanizakura, all the rice used for sake brewing is processed in-house, from the polishing of the brown rice. After that, about 40% (average) of one grain is scraped off to remove the part that will be the taste of sake. In addition, the subsoil water from the Yatsugatake southern foot plateau springs wells up in the deep well. Tanizakura's sake is born by adding the skill of brewers to the blessed natural products.
