This is a standard Shichiken sake made with careful preparation and local rice, giving it a crisp fruit flavor and light acidity. It is made using the sake brewing rice variety "Yume Sansui."
A hybrid of the well-known Yamadanishiki, it is characterized by its soft flavor and ability to bring out the umami of the rice.
We carry out careful long-term, low-temperature fermentation management to bring out a refreshing mouthfeel and light ginjo aroma.
It's not flashy by any means, but it's a classic Junmai Ginjo sake that's loved locally for its reliable quality.
