This is a sweet potato shochu that you can enjoy the deep aroma and taste of "handmade" koji making, which is the foundation of shochu making.
The delicate koji is made by hand and with all five senses without relying on machines, and sweet potatoes (Kogane Sengan) from Kagoshima Prefecture are added and carefully fermented in a turtle pot.
"Hand-made shochu" is the stage of cultivating malt, which is the foundation of shochu, without using a machine that can control the temperature. This sweet potato shochu is made using a method that nurtures koji while touching it.
In the brewery, we use traditional hand-made methods using 220 mortar lids .
The deep richness and strong aroma are impressive, and you can also feel the soft sweetness of the potato.
Whether you mix it with hot water or water, you can enjoy its rich and deep taste.
