This sweet potato shochu is made by hand during the koji making process, which is the foundation of shochu production, and allows you to enjoy its deep aroma and taste.
The delicate koji is made by the brewer's hands and five senses without relying on machines, and sweet potatoes (Golden Sengan) from Kagoshima are added and carefully fermented in a kamepot.
``Handmade shochu'' refers to the process of cultivating the koji that forms the basis of shochu, and is made directly by the brewer's hands in a wooden room called a koji room, without the use of temperature-controlled machines. This sweet potato shochu is made using a method that nurtures the koji through interaction.
In our brewery, we use a traditional handmade method using 220 lids .
It has an impressive deep richness and strong aroma, and you can also feel the soft sweetness of the sweet potato.
Whether you mix it with hot water or water, you can enjoy its rich, deep flavor.
