A robust dry white wine with a mineral feel that harmonizes the firm fruitiness, the bitterness derived from Koshu grapes, and the sourness reminiscent of pomelo.
It goes well with Japanese cuisine in general, such as dishes using root vegetables and wild vegetable tempura.
