A new type of sweet potato shochu with a refreshing mint flavor!
Compared to the same brewery's popular potato shochu, Flamingo Orange , it doesn't have as much of a fruity scent, but when you put it in your mouth, you can feel the refreshing sweetness of mint.
While Flamingo Orange uses sweet potato koji, this cool mint green uses rice koji.
moreover! Toji Yasuda doesn't think it's interesting to prepare the sake in the usual way, so in order to bring out the uniqueness of the sake , he adopts " donburi preparation " , in which koji, potatoes, and yeast are prepared at the same time.
The Kagoshima fragrant yeast No. 1 used tends to increase the amount of ingredients that lead to banana-like aromas, but the flamingo orange using sweet potato koji was not so expensive. He thought that rice malt was necessary to enhance the aroma component, so he decided to work on making potato shochu using rice malt and Kagoshima Kaori Yeast No. 1 .
After distillation, it had a strong banana scent, but during aging, the scent changed little by little, and it became possible to feel a mint-like scent.
