Uses 100% Koshu variety from Katsunuma.
By lowering the squeeze rate than usual, the bitterness and astringency peculiar to Koshu grapes are suppressed.
In addition, it is fermented at a low temperature to express the aroma and taste honestly, and brewed with a sur lee method to bring out the thickness and flavor.
It is finished in a dry white wine with a scent like white peach and pear, and a firm texture.
