The sake rice “Omachi” used was born in Okayama Prefecture in 1859 .
It has large grains and large shinpaku ( pure white starch in the center of the rice ) , and was called the best sake rice.
Because it has excellent properties for sake rice, it is used throughout the country to hybridize new varieties, and most of the sake rice varieties such as ``Yamada Nishiki'' and ``Dewa Sansan'' are descended from it.
It is exactly the sake rice that has created the taste of modern sake.
Both the cultivation of rice and the preparation of sake are extremely difficult, but the sake is full of unique, mellow and gentle flavors.
This sake, Dewazakura Junmai Ginjo Omachi, is aged slowly and carefully, allowing you to enjoy the thick, full-bodied flavor unique to Omachi rice and the deep flavor that comes from aging.
