This is a small-batch challenge tank brewed using the extremely rare "Jugemu" rice from Fukuoka Prefecture and just 1.8325% "Dewasansan," a rice variety suitable for sake brewing from Yamagata.
A juicy Junmai Daiginjo with a crisp aftertaste.
The aroma and flavor are well balanced and can be enjoyed during meals.
・About Fuji Sake Brewery Founded in 1778 (Anei 7), Eiko Fuji is a sake brewery in the Oyama area of Tsuruoka City, Yamagata Prefecture, with ties to the Sengoku period warlord, Kato Kiyomasa.
We practice brewing almost all year round, and deliver fresh new sake every month, such as Yaminari Shusui, Shichisei, and Mori no Kuma-san, as well as a variety of "unfiltered raw sake" made with carefully selected sake rice and yeast.
