More than 60% of the rice planted area in Yamagata Prefecture uses Haenuki, a brand of edible rice that is far more popular than other varieties.
In general, edible rice tends to have higher amino acid content than rice suitable for sake brewing, and is more likely to develop unpleasant flavors, making it unsuitable for sake production.

A refreshing finish that eliminates the negative aspects of edible rice.
Because it is origami, you can feel the taste of the rice itself, but even if you suppress the sweetness, you will not feel the bitterness, acridness, or excessive acidity that can be considered as miscellaneous tastes.
