An up-and-coming natural winery that started home brewing in 2017.
A blend of Koshu from a contracted farm in Katsunuma Town and Chardonnay from our own fields in Makioka Town.
After destemming and crushing, the juice is pressed and frozen, and after 3 days, the concentrated juice is fermented at a low temperature.
After fermentation, 20% of the 2021 barrel-aged Koshu and Chardonnay whiskey is blended to enhance the constituent elements and bring out the complex taste.
Brewed without sugar and acid to make the most of the flavor.
A clear, bright color with a light yellow-green tint. The scent is citrusy, such as grapefruit and lemon, and you can also feel tropical scents such as apple, white peach, banana, and pineapple. Pleasant stimulating acidity and dry taste in the mouth. This is a wine where you can enjoy the sharpness of Koshu that has been polished to the maximum, the throat, and the refreshing aroma.
It is made with less alcohol and antioxidants, and is characterized by its soft and very soft mouthfeel. You can also feel the almond incense derived from the barrel.
It is recommended to drink at around 10-15°C, not too cold.
