Koshu, which is located in the mountainous area of Katsunuma and has an altitude of over 400m , is fermented and stored in stainless steel tanks.
We deliberately avoid sur-lie or low-temperature fermentation, and carefully brew the sake to bring out the clarity, coolness, delicate fruit aroma, and dignified, characteristic taste of Koshu.
