・Commitment to water
We use the most suitable water for sake brewing from the subsoil water of the Chikugo River for the brewing of special named sake (ginjo, junmai, honjozo).
・Commitment to rice
The varieties are Yamadanishiki from Itoshima, Fukuoka and Yumeichiken from Fukuoka Prefecture. Washing with a large amount of water to completely wash away the rice bran produces sake with a clean and straightforward taste. The moisture content of raw rice affects the quality of sake, so the moisture content of the raw rice is properly controlled. This process produces good koji and produces high-quality sake.
・Commitment to yeast and koji
In order to ferment with healthy yeast, we mainly use "self-cultivated yeast" grown in-house. Sake ( junmai ginjo) is made from the black koji used in shochu. Kurokabuto (black helmet ) is used in only a few places in Japan.
